The last couple of weekends, on a Sunday afternoon I have been baking. This is quite a rare thing for me, sometimes I’ll bake cakes at Christmas time or maybe a couple of times a year when I feel like it but not generally for “everyday eating”.
The first two Sundays I made cherry slice and chocolate slice, the second attempt was far better than the first after discovering I needed to make double the mixture the recipe book says with far less butter. I must write that down in the book so I remember for next time…
Yesterday was my first attempt at muffins - just plain ones. I was a bit concerned about them rising and coming out if the tin without falling apart / sticking but it was fine and I’m well chuffed with how they turned out. Next Sunday I think it will be choc chip muffins!
